1. Prepare the Bananas
Peel the bananas and slice them lengthwise or into medium-thick pieces.

2. Make the Batter
In a bowl, add maida, rice flour, sugar, salt, turmeric powder, and cardamom powder.
Gradually add water and whisk to make a smooth, lump-free batter.
Batter should be thick but flowing (like pakora batter).

3. Coat the Bananas
Dip each banana slice into the batter ensuring it’s well coated.

4. Fry the Appams
Heat oil in a deep pan.
Fry the coated banana slices on medium flame until golden brown and crispy.
Remove and place on paper towels to absorb excess oil.

Serve as an evening snack with tea or coffee.
Tips
1. Choose the Right Banana
Use ripe Nendran bananas (firm but sweet). Overripe ones can make the fritters too mushy; underripe ones lack sweetness.

Slightly thick batter ensures even coating. Too thin → falls off; too thick → becomes doughy.
Mix maida and a little rice flour for a crispy yet soft texture.
