A roasted sweet pepper and tomato mayo sauce. Great for dipping or cooking with. I use it to crust a chicken for roasting or serve over tender new crop boiled potatoes.

A roasted sweet pepper and tomato mayo sauce. Great for dipping or cooking with. I use it to crust a chicken for roasting or serve over tender new crop boiled potatoes.

Spray the peppers, shallots and garlic bulbs with olive oil. Roast the peppers, shallots, garlic bulbs in oven, heat to 450 F degrees, about 25 minutes till peppers are soft.

Peel the shallots, garlic bulbs and peppers, remove peels, stems and cores. Put in food processor with tomato paste, lemon juice,flaked sea salt, pepper, and mayo. Pulse till smooth. Taste, adjust lemon juice, seasalt, pepper as desired.

Good for one week in the fridge with traditional mayo, two weeks with vegan mayo.

Serve over boiled new crop fresh fingerling potatoes.
