Wash rice twice, soak in salty water for 2 hours.

Boil rice in 8 cups water with salt until water is almost gone.

Add butter and saffron, pour oil around the rice, cover with lid, and steam on low heat. For tahdig, cook longer until a golden crust forms at the bottom.

For kebab, mix minced meat, grated onion, salt, turmeric, pepper, and cumin by hand.

Let the meat mixture rest in the fridge for 30 minutes.

Spread meat mixture evenly in a pan, top with melted butter.

Cook on medium heat until set, then cut into pieces.

Fry tomato slices, green pepper, sour grapes, and tomato paste in oil.

Add fried mixture to the pan with kebab, cook together for a few minutes.

Serve kebab with Persian rice. Enjoy!
Tips
For tahdig, ensure to cook the rice longer until a golden crust forms at the bottom.
