This is a traditional Nigerian dish. Spicy is something I enjoy and this can be eaten with beef, goat, chicken or fish. All are great with it. Today just this yummy rice 👌
Easy jollof rice 🌾
This is a traditional Nigerian dish. Spicy is something I enjoy and this can be eaten with beef, goat, chicken or fish. All are great with it. Today just this yummy rice 👌

Clean rice very well. Cook and set aside. Put tomatoes in bottom of blender (the juice will help with blending) add cut up onion and red pepper deseeded, add scotch bonnet (opt),chili peppers I leave the seeds for more flavor,maggi and garlic. Set aside. In a frying pan with oil put in chopped ginger, bay leaves, thyme and uda. Fry on medium until the bay leaves start to change color. Stir frequently. Turn off. Add ginger to blender. Blend til smooth.

Back to the frying pan with remaining fried seasonings. Remove bay leaves and turn heat to medium and add 1/4 c tomato paste. Stirring frequently until you see the oil seperate, then add the blended veggies to the pan. Add 1tbsp ground crayfish (optional). Let reduce about half and gently add the rice.

Now enjoy this tasty jollof rice with your choice of meat or as is. Make it a beautiful day 🥳
Tips
Let rest for a few minutes for all the flavors to absorb.
