I grew up watching my mom create one-pot wonders with left overs to save time & money. Now, as an adult vegetarian who can not have onions & garlic, I rely on this basic recipe & spice it up in a variety of ways.

I grew up watching my mom create one-pot wonders with left overs to save time & money. Now, as an adult vegetarian who can not have onions & garlic, I rely on this basic recipe & spice it up in a variety of ways.
Steps

Cut eggplant, zucchini, peppers, and any optional veggies into bite-sized pieces.

Heat olive oil or butter in a pot over medium heat.
- 3
Add all vegetables (except spinach) and sauté for 2 minutes.
- 4
Add a sprinkle of broth, salt, and pepper. Stir and cook until veggies are just tender.

Stir in spinach (if using) and fresh herbs, cook 1 more minute.

Serve over rice or pasta. Top with toasted pine nuts, pumpkin seeds, and a poached egg if desired.
Tips
For extra flavor, consider browning the butter before adding the vegetables, and poach the eggs just before serving.
