Stir until smooth. Cover loosely with a cloth.
Place in a warm, draft-free spot (70–75°F / 21–24°C).

Discard half of the starter.
Add 100 g all-purpose flour + 100 ml water. Stir and cover loosely.

Feed every 24 hours: discard half, then add fresh flour + water.
Watch for bubbles, rising/falling motion, and a pleasant tangy smell.

Starter should be bubbly and slightly sour.
Float Test: Drop a spoonful into water; if it floats, it’s ready to bake!
