My family went absolutely nuts for this one. You won't even miss that it's not pan fried!

Place egg and milk into a shallow dish and whisk to combine. In a second shallow dish stir together Carbquik, Parmesan, salt, pepper, onion powder, and garlic powder until fully combined.

Pat chicken thighs dry. Working on at a time dip in egg mixture and then coat in Carbquik mixture. Place pieces in a single layer on a baking sheet (or piece of foil or waxed paper for easier clean up). Let sit about 15 minutes to let the coating set.

While chicken is setting preheat air fryer to 360°F. Spray top side of chicken with cooking spray. Place in air fryer in a single layer, spray coated side down and then spray again on new "top side".

Air fry for 10-12 minutes, turning halfway through. Check internal temp to ensure it is at least 165°F. Air fry additional time if needed to reach the safe temp. When done, let rest 5 minutes. Serve and enjoy!
Tips
I have a large air fryer that actually has wire racks (2) instead of a basket. If you cannot fit your chicken into a single layer in your air fryer you will need to work in batches.
