Ingredients

1 hour 30 minutes (including rising time)
2–4 servings
  1. 1 cupsourdough discard (about 250g)
  2. 2 1/2 cupsall-purpose flour (300g)
  3. 3/4 cupwarm water (180ml)
  4. 1 tspinstant yeast (optional)
  5. 1 1/2 tspsalt
  6. 1 tbsphoney or sugar
  7. 2 tbspolive oil or melted butter
  8. Optional Add-Ins: herbs, cheese, raisins, or cinnamon for flavor twists

Steps

1 hour 30 minutes (including rising time)

    Step 1:
    Mix sourdough discard, warm water, and honey in a bowl until smooth.

  2. 2

    Step 2:
    Add flour, salt, and yeast. Mix to form a dough.

  3. 3

    Step 3:
    Knead for about 8–10 minutes until smooth and elastic.

  4. 4

    Step 4:
    Place dough in a greased bowl, cover, and let it rise for 1–2 hours or until doubled.

  5. 5

    Step 5:
    Punch down the dough, shape into a loaf, and place in a greased pan.

  6. 6

    Step 6:
    Cover and let rise again for 30–45 minutes.

  7. 7

    Step 7:
    Bake at 400°F (200°C) for 30–35 minutes, until golden brown.

  8. 8

    Step 8:
    Let cool 20–30 minutes before slicing. Enjoy!

Tips

Tips for Making It Tasty:

Add a little butter on top after baking for a shiny crust.

If your kitchen is cold, proof the dough in your oven with the light on.

Use discard that’s 1–3 days old for the best flavor.
