Chop all the vegetables very finely. I like to blend them lightly in a blender at low speed rather than chop them. Never puree them; leave some chunks.

Add mustard and spices, except vinegar. Stir. Taste.

Bring the mixture to a boil. Cook for 4-5 minutes. Dissolve the starch in a small amount of cold water. Add to the sauce. Cook for another 5 minutes.

Pour vinegar before adding starch, or at the very end. Store the sauce in the refrigerator.
