Lá Giang - River Leaves or also known as Sour Leaves, are quite rare to see fresh in the states. These leaves have a slight sourness to it that makes you want to keep eating more! This chicken soup with river leaves brings back childhood memories. The sourness is a balance between a tamarind and a lime. With more of a sourness hit when you eat the leaves, while the soup is subtle and aromatic.

Marinade your chicken with the ingredients listed under “chicken marinade”. Let marinade for at least 30 minutes.

In a pot, add cooking oil and lemongrass stalk. Sautee to bring out the aroma of lemongrass. Add marinaded chicken. Sauté till evenly seared.

Add water to pot. Fill to over cover chicken. Bring to boil. Skim off foam. Let simmer for 5 minutes. Then remove lemongrass stalk.

Crush river leaves and add to pot. Add whole green chili. Simmer for 3 minutes.

Ready to enjoy with rice or rice noodles!
