Ingredients

  1. Chicken marinade
  2. 1whole free range chicken (cleaned & chopped into chunks)
  3. 1minced lemongrass
  4. 4minced garlic
  5. 1minced shallots
  6. 1 tspchicken bouillon
  7. 3/4 Tbspsugar
  8. 1/2 tspsea salt
  9. 1/4 tspmsg
  10. 1/2 tspground black pepper
  11. 1 Tbspfish sauce
  12. Others
  13. 1 lbRiver leaves (no stems)
  14. 2lemongrass stalk (smashed & halved)
  15. 2 Tbspcooking oil
  16. 2 tspsea salt
  17. 2 tspchicken bouillon
  18. 1 Tbspfish sauce (or more to taste)
  19. 4-5whole green chili

Steps

    Marinade your chicken with the ingredients listed under “chicken marinade”. Let marinade for at least 30 minutes.

    In a pot, add cooking oil and lemongrass stalk. Sautee to bring out the aroma of lemongrass. Add marinaded chicken. Sauté till evenly seared.

    Add water to pot. Fill to over cover chicken. Bring to boil. Skim off foam. Let simmer for 5 minutes. Then remove lemongrass stalk.

    Crush river leaves and add to pot. Add whole green chili. Simmer for 3 minutes.

    Ready to enjoy with rice or rice noodles!
