Potato, Green Bean, Ham, and Mozzarella Casserole

A Genovese recipe—polpettone genovese—that I’ve modified. The original recipe uses potatoes and green beans with sautéed onion, but I chose to add mozzarella and ham to make it richer!

Trim the ends off the green beans, rinse under running water, and cook in boiling salted water. Drain and cut into medium pieces.

Wash and peel the potatoes. Boil them without the skins and without salt. Drain and mash with a potato masher.

Dice the ham and mozzarella. Add them to a bowl with the mashed potatoes, egg, Parmesan, a sprinkle of marjoram, salt, and pepper. Mix with a spoon, add a little milk, and finally fold in the green beans.

Butter a baking dish and sprinkle with breadcrumbs, shaking out the excess. Spoon in the mixture and smooth the top. Sprinkle with more breadcrumbs and a little Parmesan for a crispy crust. Dot with small pieces of butter and bake at about 350°F (180°C) for 35–40 minutes, or until golden, depending on your oven.
