Vada pav is one of the most famous street food of Mumbai which is a spicy potato vada with pav and spicy garlic chutney. I have made Mumbai Style Vada Pav with some interesting twists. I love Vada Pav because it combines simple yet bold flavors and the magic lies in the perfect balance of textures: the crunchy exterior of the vada, the soft pav, and the spicy, tangy chutneys (often garlic or tamarind) that complement the rich flavor of the potato filling.

I love Vada Pav because it combines simple yet bold flavors and the magic lies in the perfect balance of textures: the crunchy exterior of the vada, the soft pav, and the spicy, tangy chutneys (often garlic or tamarind) that complement the rich flavor of the potato filling.

Firstly, put oil in a large pan and add mustard, garlic, chili and fry well.

Add red chili powder and, turmeric powder and fry for 30 seconds.

Next, add this in boiled and mashed potatoes.

Add ½ tsp salt and chaat masala powder.

Mix well and prepare the potato mixture and keep it aside.

Take gram flour, turmeric, red chilli powder, carom seeds in a bowl.

Add salt, water and baking soda and make a pakoda batter.

Now make ball shaped potato mixture and flatten it.

Heat oil in a pan and deep fry the potato mixture by dipping it in the prepared gram flour batter.

Fry the vadas on medium heat till golden and crisp.

For dry chutney, roast garlic on a tawa for a minute. Then roast peanuts on the same tawa.

Heat oil in a pan and put some gram flour batter with spoon. Fry for a minute and remove from oil.

Remove the peel of roasted peanuts and grind it in a mixer along with garlic, fried batter, salt and red chilli powder.

Cut bread slices in round shape and toast on pan with adding butter.

Apply green chutney in 4 bread slices. Put a vada on it and then put another bread slice.

Sprinkle dry garlic chutney on bread slices, keep another vada on it and then put a bread slice on it again.

Sprinkle some dry garlic chutney on it serve with fried green chilli.
