Ingredients

  • JarPassata Tall (w Basil)
  • Small can of tomatoes (optional)
  • 1/4 cupVodka
  • 3 tbspMirin
  • The Veg
  • 2 tbspButter
  • 1 tbspOlive oil
  • 1Sweet or 2 Yellow onions
  • 2-3carrots
  • Pepper and Celery Salt
  • 5gloves of garlic
  • 1-1.5 cupsDry White Wine like Pinot Gregio
  • The meats
  • 100-225 gramsPancetta
  • 6Hot Italian Sausage
  • 6Italian Sausage
  • 1 lbsM-HQ Steak
  • 1/2 cupRed Wine (optional)
  • 1/2 tspreduced sodium soy sauce
  • 1Beef Bouillon Cube or 250 ml concentrated beef stock
  • 2Heaping TBSP Italian Tomato Paste
  • 1 tspOregano
  • 2Bay leaf
  • Pinchnutmeg (optional)

Steps

  1. 1

    Put passata, vodka and mirin in pot and shove in oven 325.

  2. 2

    Decase Sausage, put aside.

  3. 3

    Grate onion and carrots.

  4. 4

    Put a Dutch oven on stove over medium heat (use boiling element).

  5. 5

    Add butter, oil, veg, celery salt and pepper and wait until fond develops.

  6. 6

    Add and cook chopped garlic for 2 min.

  7. 7

    Use all white wine to deglaze pan and continue cooking until most liquid is gone.

  8. 8

    In a small bowl add diced Pancetta and beginning rendering in microwave for 2-3 min, then continue rendering in Dutch oven.

    Dump veg into large bowl and continue rendering pancetta.

  10. 10

    Once Pancetta is sufficiently rendered, put aside in that same small bowl.

  11. 11

    Add Bouillon Cube, Soy sauce, Tomato Paste, Oregano and red wine and render until 1/2 liquid is gone. Optionally for more tomato notes, start with just browning the paste.

    Begin cooking the sausage, crumbling it continously, while covering the jus with it for 3-4 min then add steak for just 3 min.

    Put meat aside, and add the passata from the oven to the Dutch oven + veg and return to oven for 30 min uncovered.

    Reduce oven heat to 315 Fahrenheit, add meat and cook for another hour.

Tips

Serve with Rigatoni.
If slightly too spicy, add some fancy cheese (DRY, but not plain parmason).

For a fast version, remove vodka, double the paste and roast it, and do the whole thing on stove top. The vodka makes the most of the passata. Milk is not used because it neuters the tomato flavour. A little red wine adds depth. You could also add mushroom caps if doing it the long way.
