Steps

Heat coconut oil in a pan. Add mustard seeds and let them splutter. Also add a heaped teaspoon of Black gram or urad dal.

Add sliced shallots, green chillies, and curry leaves. Saute until fragrant.

Add finely chopped chow chow, turmeric and salt. Mix well. Cover and cook on low heat until pumpkin is tender.

Add fresh shredded coconut. Mix and cook for 2 more minutes.

Serve warm with Rotis or Parathas. Or even a steaming hot plate of simple boiled Rice. Enjoy!
Tips
Use a manual chopper or an electric one for the fine chopping of the Vegetable.
