Mixed Veg Kolhapuri Kofta

Grate cabbage, carrot, potato, and capsicum. Squeeze out excess water.

Mix vegetables with corn flour, besan, and salt. Shape into small balls.

Deep fry kofta balls in hot oil until golden. Set aside.

Grind fried onion, tomato, dry coconut, and garam masala into a smooth paste.

Heat 2 tbsp oil in a pan. Add black cardamom, green cardamom, cinnamon, cloves, and bay leaf.

Add the ground paste and sauté for 3 minutes.

Add red chili powder and salt. Cook for 2 minutes.

Pour in water, simmer for 5 minutes to make the curry.

Add fried koftas to the curry just before serving.serve the mix veg kofta with chapati or roti
Tips
For extra flavor, you can roast the dry coconut before grinding it with the other ingredients.
