Avocado and Cream Cheese Sushi

Nori, or seaweed paper, is made of red algae that has been dried up into thin sheets. It is packed with vitamin B12 which is essential for red blood cell production, nerve and brain health, DNA synthesis and energy production.

One sheet of Nori contains ~60% of your DV of vitamin B12, making it a great option for vegetarians.

Notes:
- 1 cup of uncooked sushi rice, should yield 3 cups of cooked rice.

-Have a small cup with water to dip your fingers in when spreading the rice on the Nori sheet to avoid it sticking to your hands.

-If you do not have a bamboo sushi mat, no worries! Just use a piece of plastic wrap.

Ingredients

30 minutes
20 sushi pieces
  1. 3Nori sheets
  2. 1Hass avocado
  3. 1 cupsushi rice (uncooked)
  4. 3 ozcream cheese
  5. 1/2 tbsprice vinegar
  6. 3 tspsesame seeds
  7. 1/2 tsplemon juice

30 minutes
  1. 1

    Assemble all ingredients: Make sushi rice according to package instructions. Add 1/2 tbsp of rice vinegar. Cut avocado and sprinkle a few drops of lemon juice over it to avoid browning.

    Prepare sushi station by placing a piece of plastic wrap on a bamboo mat or flat, clean surface. Add Nori sheet.

    Add 1 cup of rice, and using wet fingers, spread rice so it’s distributed evenly. Leave about 1/2 inch space at the top to help seal sushi.

    Add a few slices of avocado, then about 1oz of cream cheese rolled thinly. Optionally, top it with 1tsp of sesame seeds.

    Roll sushi carefully but firmly. Seal end with water. Repeat x3

    Place sushi in the fridge for 5-10 minutes before cutting into 1 inch pieces. Serve with a side of soy sauce.
