Ingredients

6–7 hours on low or 3–4 hours on high

  1. 28–32 oz Boneless, skinless chicken breasts (or thighs)
  2. 1 packetTaco seasoning
  3. 15 ozcan Black beans (drained, rinsed)
  4. 15 ozcan Pinto beans or kidney beans (drained, rinsed)
  5. 15 ozcan Corn (drained)
  6. 15 ozcan Diced tomatoes with onion, celery & green bell pepper
  7. 15 ozcan Diced tomatoes
  8. 8 oz (1 cup)Salsa
  9. 1medium Sweet onion (chopped)
  10. 24 oz (3 cups)Low-sodium chicken broth

Steps

6–7 hours on low or 3–4 hours on high

    Place chicken in slow cooker, sprinkle with taco seasoning.

  2. 2

    Add tomatoes, salsa, beans, corn, onion, and broth. Stir gently.

  3. 3

    Cook on low for 6–7 hours or high for 3–4 hours.

  4. 4

    Remove chicken, shred, and return to pot. Stir to combine.

  5. 5

    Taste and adjust seasoning as needed. Serve with your favorite toppings.

Tips

Optional toppings include Greek yogurt or sour cream, diced avocado, shredded cheese, crushed tortilla chips, and fresh cilantro or jalapeños.
