A sweet and delicious snack for lunch. It doesn't seem heavy on the stomach, but make sure none of the ingredients cause stomach problems. Take care ! Enjoy life!

Mix gluten-free flour, sugar, salt, and baking powder in a bowl.

Add the egg and mix until combined.

Gradually add cold water, stirring until smooth.

Add the banana. Mash for a smooth texture, or leave chunky for more texture.

Let the batter rest for 10 minutes.

Pour the mixture into 4 small cups.

Bake at 180°C for 30 minutes.

Spread a spoonful of plum jam on top of each cupcake.

Place cupcakes back in the turned-off oven for a few minutes to melt the jam.

Serve hot. Optionally, add a scoop of gluten-free ice cream or sorbet.
Tips
For a richer banana flavor, use a very ripe banana and mash it well.
