Hong Kong-Style French Toast

While I lived in Hong Kong, these were always served at cha chaan teng (traditional Hong Kong cafes).
The traditional Hong Kong-style French toasts uses white milk bread and are deep fried, but I use wholemeal bread and pan fry instead.

In a shallow pan/plate, whisk together the eggs, milk and salt until fully combined.

Cut the edges off the bread and spread a tbsp of peanut butter on 4 slices. Close the sandwich with the remaining slices.

In a frying pan, heat some oil over medium heat and fry the toasts until brown. Make sure you fry the sides as well. Transfer the cooked French toasts onto a paper towel-lined plate.

Serve with butter and condensed milk. I added some mixed berries too. Enjoy!
