Ingredients

  1. 8-10 piecesLobster ravioli
  2. 2 tablespoonsKerrygold Irish butter
  3. 1 cupHeavy cream
  4. to taste Salt
  5. to taste Black pepper
  6. for garnish Fresh oregano or basil (optional)
  7. 1large Chicken breast
  8. 1 tablespoonOlive oil
  9. 1 teaspoonLemon pepper seasoning
  10. to taste Salt
  11. 2 cupsSpring mix or baby greens
  12. 2 teaspoonsOlive oil
  13. 1 teaspoonLemon juice
  14. to taste Salt and pepper

Steps

  1. 1

    Score the chicken breast and pat dry. Rub with olive oil, lemon pepper, and salt.

  2. 2

    Heat a cast iron pan on medium-high. Place chicken skin-side down (if skin-on) to render fat, or just sear if skinless.

  3. 3

    Grill chicken for 4 to 5 minutes per side until golden and cooked through. Rest 2 minutes, then slice.

    Bring salted water to a boil. Add lobster ravioli and cook 3 to 4 minutes until they float. Drain and set aside.

  5. 5

    In a pan, melt Kerrygold butter over medium heat. Add heavy cream, stir, and simmer 2 to 3 minutes until slightly thickened. Season with salt and pepper.

  6. 6

    Add cooked ravioli to the sauce and coat gently.

  7. 7

    In a bowl, toss greens with olive oil, lemon juice, salt, and pepper. Top with sliced chicken.

  8. 8

    Plate ravioli with sauce on one side, greens and chicken on the other. Garnish with fresh herbs if desired.

Tips

Using Kerrygold Irish butter enhances the richness of the sauce, and scoring the chicken helps it cook evenly and adds flavor.
