Ingredients

25-30 minutes
5-6 servings
  1. 500 gmfinely chopped Beetroot
  2. 2 tbspCoconut oil
  3. 1 tspMustard seeds
  4. 8-10Curry Leaves
  5. 2-3finely chopped Green Chillies
  6. 1 tspchopped Ginger
  7. 2 cloveschopped Garlic
  8. 1medium sized chopped Onion
  9. 1/2 tspTurmeric powder
  10. 1/2 tspCoriander powder
  11. 1 tspSalt
  12. 5-6 tbspfreshly grated Coconut

Steps

25-30 minutes
  1. 1

    Heat coconut oil in a pan, add mustard seeds and let them splutter.

  2. 2

    Add curry leaves, green chillies, ginger, garlic and onion. Saute until onion softens.

    Add turmeric powder and coriander powder. Stir for a few seconds. Also add kashmiri red chilli powder if desired.

    Add chopped beetroot and salt. Mix well.

  5. 5

    Cover and cook on a low heat until beetroot is tender, stirring occasionally.

    Add freshly grated coconut now. Mix and cook for 2 more minutes. Serve it hot alongside steamed Rice or Rotis. Enjoy!

Tips

Using a chopper for the Beetroot gives it a nice, even texture. Adjust the spice level by adding more or fewer Green Chillies.
