To make palak paneer, first clean the spinach thoroughly, rinsing it several times, then chop it. Heat water in a large pot. Once the water is boiling, add the chopped spinach and blanch it for 2 to 3 minutes.

2 ) Now take out the spinach water in a vessel and immediately put the spinach in ice water. This stops the process of ripening the spinach and preserves the green color of the spinach gravy.

3 ) Grind the spinach once it cools down.

4 ) On the other hand, grind tomato, ginger and garlic in a mixer jar to make a paste. Cut the paneer into triangle shape.

5 ) Heat cooking oil in a kadhai and deep fry the paneer till light golden. You can also make palak paneer without fries.

6 ) Now turn on the gas, place a pan, and heat the cooking oil. Once the oil is hot, add asafoetida and cumin seeds, then add the onion and fry until it turns red.Once the onion turns red, add the tomato, ginger, and garlic paste and let it cook thoroughly.Once the tomato, ginger, and garlic paste is cooked thoroughly, add the spices and fry. After that, add the spinach paste.

7 ) Cook the spinach paste stirring for some time.

8 ) Now add the fried paneer in the spinach paste and after 2 to 3 minutes add the feti hui malai or cream then switch off the gas and sprinkle green coriander.

Tips
#Note
If you don't use tomatoes in the spinach paneer gravy, use lemon for sourness.
