Who doesn’t love fried wings?! Whenever I would go to an Asian family gathering or potluck, this is probably almost always on the menu. Crispy, lightly battered, juicy wings that are seasoned to perfection! Jalapeno, crispy garlic, and scallions add aroma and spice. It’s quite an addicting dish. Eat it while it’s hot!

Prepare the wings: separate the drums from the flats if you bought whole wings. Throw it in a large zip lock bag and add: sea salt, black pepper, garlic powder, cornstarch, & 1 large egg. Seal and tumble till evenly mixed. (You might have to do a couple bags depending on how much wings or you’re frying up)

Prepare your salt & pepper mix by combining all ingredients in the “salt & pepper mix” section above.

Deep fry your wings at 375F for 7-8 minutes. Then add in minced garlic. Fry till crispy golden (1-2 minutes). Remove along with the wings and add in tossing bowl with chopped jalapeños & chopped scallion heads. Use a strainer to remove all the crispy garlic from the fryer and add to tossing bowl.

While wings are hot and oily, sprinkle salt and pepper mixture evenly to coat wings. Enough to where you think it covers well. Toss and shake to evenly coat wings, using the heat from excess oil and from the wings to slightly cook the jalapeños and scallions.
