Steps

Heat oil in a pan. Add mustard seeds, cumin seeds and hing.

Add chopped dill leaves and potatoes. Mix well.

Add a little water, cover and cook for 5–7 minutes until potatoes soften.

Add turmeric, red chilli powder, coriander powder and salt. Mix everything well.

Add water to make it slightly gravy-like. Simmer until flavors blend and aromatic.

Turn off the heat and add jaggery if using. Mix and serve warm.
