Sauté the veggies: Slice onions and mushrooms; cook in olive oil with salt, pepper, thyme, a splash of bourbon, and butter until caramelized but still juicy.

Cook the bacon: Slowly render thick-cut bacon over medium heat until crisp and even.

Toast the buns: Lightly toast brioche buns in a small amount of bacon fat.

Smash the patties: Form two 80/20 beef balls, smash in a hot cast iron pan with parchment, and season with salt and pepper.

Melt the cheese: Flip, top with Munster cheese, cover, and cook until melted.

Assemble: Layer mayo, patties, bacon, sautéed mushrooms + onions, and top bun.
