Ingredients

1 loaf
  1. 3medium (about 350g, mashed) Ripe bananas
  2. 150 gGranulated sugar
  3. 115 gUnsalted butter (melted)
  4. 2large Eggs
  5. 95 gAll-purpose flour
  6. 95 gWhole wheat flour
  7. 1 tspBaking soda
  8. 0.5 tspSalt
  9. 1 tspVanilla extract
  10. 60g, chopped Walnuts (optional)

    Preheat oven to 350°F. Grease a loaf pan.

  2. 2

    Mash bananas in a bowl. Add melted butter and mix well.

  3. 3

    Stir in sugar, eggs, and vanilla extract until combined.

  4. 4

    In another bowl, whisk together all-purpose flour, whole wheat flour, baking soda, and salt.

  5. 5

    Add dry ingredients to wet mixture. Stir until just combined.

  6. 6

    Fold in walnuts if using.

  7. 7

    Pour batter into loaf pan. Smooth the top.

  8. 8

    Bake for 50-60 minutes, until a toothpick comes out clean.

  9. 9

    Cool in pan for 10 minutes, then transfer to a rack.

Tips

Using half whole wheat flour adds a hearty texture and flavor to the banana bread.

I need to try this! When I use whole wheat my cakes turn out very dry and not as fluffy as desired. Do you happen to know what the trick could be? Thank you for the recipe!
