Homemade Carrot Ginger Soup

For the broth: In a large pot, add water, 1 carrot, celery, 1 onion, garlic, thyme, bay leaf, black peppercorns, and salt.

Bring to a boil, then simmer for 30 minutes. Skim off any foam.

Strain the broth and set aside. Discard the solids.

For the soup: In a clean pot, heat a little oil. Sauté 3 carrots, 1 onion, and ginger until soft.

Add 1 liter of the homemade broth. Simmer until carrots are tender.

Blend the soup until smooth.

Season with salt and ground black pepper to taste.

Serve hot.
Tips
For a creamier texture, you can add a splash of cream or coconut milk before serving.
