Steps

Heat oil in a large soup pot. Add chopped onion and saute until soft and translucent.

Add minced garlic and ginger. Cook for 2 more minutes.

Add chopped carrots and saute for about 5 minutes to coat them with aromatics.

Add hot water, turmeric, cumin powder, salt and pepper. Bring to a boil.

Once boiling, reduce heat, cover, and simmer for 15 - 20 minutes until carrots are very soft.

1) Use an immersion blender in the pot,

2) Transfer to a blender and blend until smooth.

Before serving, toss boiled chickpeas with a little salt, pepper, and 1 tsp oil to make a crunchy topping.

Serve warm, topping with the seasoned chhole, herbs, or chilli flakes.
Tips
Use red carrots for sweetness & color. Blend smooth with immersion or high-speed blender. Toss boiled chickpeas with salt & pepper before serving for crunch. Store 4–5 days in fridge, 2 months in freezer. Add warm water if soup is thick. Herbs or chilli flakes enhance flavor.
