In a skillet on medium heat add olive oil, once shimmering, add mushrooms

Saute mushrooms for a good 5 min, stirring often. They'll get a bit of a nutty flavor if you wait to season them

Add garlic, stir. After 1 min, add spinach. Saute 5 min. Until lightly wilted

Turn off heat, add lemon juice, balsamic, salt and pepper. Once ready to serve, top with fresh parsley
