Peel and wash the potatoes. Grate them using a coarse grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much water as possible with your hands. Set aside.
Whisk the egg with the flour, - 2
Add the chopped parsley and salt to a mixing bowl. Add pepper. Stir in the ham, shredded cheddar, chopped onion, and grated potatoes. Mix well.

Place a heaping tablespoon of the mixture onto your preheated waffle iron. Cook for a few minutes until the waffle is golden brown.
