Vanilla Marble Cake

Line a cake tin with parchment paper. Preheat a pressure cooker for 5 minutes.

In a mixing bowl, whisk curd until smooth. Add oil and mix well. Add powdered sugar and combine add pinch of salt,thoroughly.

In another bowl, sift all-purpose flour and baking powder together three times.

Add the sifted flour mixture to the curd mixture. Mix gently using the cut and fold method.

Add fruit salt and mix gently.

In a small bowl, take a portion of the batter and mix in instant coffee. Set aside.

Pour the plain (white) batter into the cake tin and tap to level. Add spoonfuls of coffee batter on top. Repeat layering 3-4 times.

Use a toothpick to create a marble pattern by swirling through the batter. Tap the tin to remove air bubbles.

Place the tin in the preheated pressure cooker. Bake for 25 minutes.

Check doneness with a toothpick. If it comes out clean, the cake is ready.

Let cool, garnish as desired, and serve.
Tips
For a richer flavor, you can add a pinch of salt to the batter or use flavored oil.
