Steps

Blend ingredients together :
- 1 full can of La Costeña Chipotle Peppers in Adobo Sauce
- 3 cloves garlic minced or 1 tsp garlic powder
- 1.5 tsp ground cumin
- 1 tsp dried oregano
- 1-1.5 tsp salt
- 1 tsp black pepper
- 2 tbsp oil
- 1 tbsp lime juice
Blend to a smooth consistency as marinate for the chicken. - 2
Separate and portion chicken into 3-4 chicken thighs per ziplock bag or vacuum bags(freezer bags for future cooking).
Pour equal portion of the marinate in each bag. - 3
Marinate 1 hour or overnight.

If frozen
- let thaw overnight in the fridge or thaw in sink with warm water - 4
Cook on cast iron or griddle. Let cook for 15-25 minutes on medium high or 300-325 degrees flip chicken till each sides develop a slight char and thighs are is fully cooked. Cut chicken prior to serving to keep moister and juices.

Storage for later use : Vacumm seal and freeze remainder or all bags for portioned ready to cook meals. Fully thaw overnight in the fridge or in the sink with warm water before cooking.

Cilantro rice :
- 1 cup rice with 2 cups water and cook in rice cooker
Add after cooking :
- 2 tbsp lime juice, 1 tbsp lemon juice
- 1 tbsp oil
- 1-1.5 tsp salt to taste
Lightly fluff rice
- Lastly add cilantro chopped cilantro and mix - 7
Mild salsa :
- Equal parts onion, bell peppers, tomatoes
and jalapeños (remove the seeds for mild flavor can substitute with 1-2 tbsp hot sauce)
- Dice everything small in equal size
- 1-2 tsp lime juice
- 1 tbsp chopped cilantro
- 1/2 tsp salt to taste
Let sit for 10 minutes in the fridge to soak in the flavor - 8
Prepare mild salsa seasoning and set aside for toppings

Bring out toppings such has shredded mozzarella and sour cream add as desired.
