Ingredients

35-45minutes
6-8 servings
  • 1Lg. Can Yams, drained and mashed or 3 Sweet Potatoes, peeled cooked and mashed
  • 2Lg. Eggs
  • 4Tbsps. Ground Cinnamon
  • 1 C.Brown Sugar, packed
  • 2tsps. Vanilla Extract
  • 1/2 StickSalted Butter, melted
  • 2 BoxesJiffy Cornbread Mix
  • 2Lg. Eggs
  • 3Tbsps. Granulated White Sugar
  • 1-1 1/2 C.Milk
  • 1 1/2 SticksSalted Butter
  • 4-5Tbsps. Pure Honey

Steps

35-45minutes
  1. 1

    Preheat your oven to 350°F. Then spray a 9X13 baking dish with nonstick cooking spray. Set aside.

  2. 2

    In a large mixing bowl add all the ingredients for the Sweet Potato Batter: Mashed Yams, Melted Butter, 2 Eggs, Ground Cinnamon, Vanilla Extract, and Brown Sugar. Beat til everything is combined well and smooth. Set aside.

  3. 3

    In another large mixing bowl add all the ingredients for Cornbread Batter: Cornbread Mixes, Sugar, 2 Eggs, and Milk. Beat til everything is well combined and smooth. Then add and stir in the sweet potato batter til combined.

  4. 4

    Pour batter into prepared baking dish. Spread out evenly. Then bake for 30-45 or til golden brown and middle is almost completely done but still slighty jiggly (don't worry it will finish cooking and setting up). Remove from oven and cover lightly with foil. Set aside.

  5. 5

    Meanwhile in a small microwaveable bowl add 1 1/2 Sticks Salted Butter and 4 Tablespoons Pure Honey. Melt in 6 second intervals til melted. Then pour all over top of hot Cornbread. Recover with foil and let finish cooling to room temperature or til just still slighty warm. Serve immediately and enjoy 😋.
