Green paste : Take blanched spinach, green garlic, coriander, green chillies, ginger & salt in a mixer jar. Blend to a fine paste. Keep aside.

Take in a pressure cooker, add potatoes & cauliflower. Add 1/4 cup water & pressure cook it upto 2 whistles. Cool & let the pressure release from the pressure cooker.Than open it & mash it.

Take a pan, add 2 tbsp butter & 1 tsp oil, add asafoetida & turmeric powder. Than add onions. Saute. Add ginger - garlic paste & saute. Add green tomatoes & saute till soft.

Add pau bhaji masala & salt. Saute. Add capsicum & saute little only. Keep capsicum crunchy.Now add mashed potatoes & cauliflower & 11/4 cup water. Mix.

Add parboiled green peas & palak puree. Mix very well. Cook for 5 minutes.

Roasted pau : Take butter red garlic paste & Kashmiri red chilli powder in a pan. Mix. Place a slice of bread on it & roast it for a second only. Remove in a plate. Roast the other slice the same way.

Serving : Line a plate with green pau bhaji, bread slices & salad. Garnish with green peas, green garlic & chopped coriander.
Tips
1) Do not cook the bhaji for too long , once you add the green paste or it will loose it's green colour.
2) Don't cook the greens too much or the bhaji will become bitter in taste . Add spinach puree at the time of serving it. Just add the puree & warm it & serve immediately.
