Ingredients

45 minutes
4 - 5 serves
  1. For the Green Paste : 👇
  2. 1/2 bunchspinach, blanchedl
  3. 7-8green chillies
  4. 1 pieceginger
  5. 1/2 cupgreen garlic
  6. 1/4 cupcoriander
  7. Salt to taste
  8. Other Ingredients 👇
  9. 1 bowlgreen peas, parboiled
  10. 3-4chopped potatoes
  11. 150 gmscauliflower, cut into big pieces
  12. 1onion, chopped
  13. 7-8garlic 🧄 flakes
  14. 1capsicum 🫑, chopped
  15. 3green tomatoes (raw), grated
  16. 1 tspcoriander - cumin powder
  17. 1 tbsppau bhaji masala
  18. 1/2 tspred chilli powder
  19. Salt to taste
  20. For chilli oil 👇
  21. 1 tspred garlic paste
  22. 1/2 tsp Kashmiri red chilli powder
  23. 2 tspbutter / oil
  24. For garnish :👇
  25. Chopped coriander, boiled green peas & chopped green garlic
  26. To serve : 👇
  27. Sauteed masala pau (2 piece per plate)
  28. Kachumber salad (onion + tomatoes)

Steps

45 minutes
  1. 1

    Green paste : Take blanched spinach, green garlic, coriander, green chillies, ginger & salt in a mixer jar. Blend to a fine paste. Keep aside.

    Take in a pressure cooker, add potatoes & cauliflower. Add 1/4 cup water & pressure cook it upto 2 whistles. Cool & let the pressure release from the pressure cooker.Than open it & mash it.

    Take a pan, add 2 tbsp butter & 1 tsp oil, add asafoetida & turmeric powder. Than add onions. Saute. Add ginger - garlic paste & saute. Add green tomatoes & saute till soft.

    Add pau bhaji masala & salt. Saute. Add capsicum & saute little only. Keep capsicum crunchy.Now add mashed potatoes & cauliflower & 11/4 cup water. Mix.

    Add parboiled green peas & palak puree. Mix very well. Cook for 5 minutes.

    Roasted pau : Take butter red garlic paste & Kashmiri red chilli powder in a pan. Mix. Place a slice of bread on it & roast it for a second only. Remove in a plate. Roast the other slice the same way.

  7. 7

    Serving : Line a plate with green pau bhaji, bread slices & salad. Garnish with green peas, green garlic & chopped coriander.

Tips

1) Do not cook the bhaji for too long , once you add the green paste or it will loose it's green colour.
2) Don't cook the greens too much or the bhaji will become bitter in taste . Add spinach puree at the time of serving it. Just add the puree & warm it & serve immediately.
