Traditional Punjabi baingan bharta made by roasting brinjal or eggplantwith oil & spices .
It tastes awesome.
Steps

Wash baingan & dry it with paper towel.Roast it on medium flame from all sides till it is completely charred.

Crush ginger, garlic & green chilli in mortar pestle & keep aside.

Peel the outer layer on baingan & smash it with fork.

Now heat the pan at medium heat & add mustard oil.Once oil is hot enough add chopped onion, salt & cook it till onions are light brown.

Add chopped tomato, crushed ginger, garlic chilli.Mix well & cook for few minutes.

Now add turmeric powder, kashmiri red chilli powder, cumin, coriander powder & mix well.

Add coriander leaves, smash baingan in masala & cook till oil separates.

Baingan bharta is ready to serve.Serve the delicious bai gsn bharta with soft chapatis & parathas.
