Heat oil in a pan over medium heat.

Sprinkle salt and chilli powder over eggs and fry the eggs, yolk side down. After 2 minutes, flip the eggs and fry 1 minute. Remove and set aside.

In same pan add ginger, garlic and green chilli and fry 1 minute.

Add onion, bell pepper and fry 2 minutes.

Add soy sauce, chilli garlic sauce and vinegar and fry 2 minutes.

Add slurry and cook till sauce thickens.

Add ketchup and mix well.

Add the eggs and gently mix.

Sprinkle green onions and serve hot.
