Authentic Gud Gajar ka Halwa/ Carrot Halwa with Jaggery

This recipe is around 100 years old, a traditional recipe from my great grandmother, who passed it on to my granny then my mom learnt it and taught me too. It has the rich taste of Carrots slow cooked in ghee and then the jaggery is added . The unique part is, it is melted in ghee and cardamom powder and then added to the halwa for a royal treat.

First, wash, dry and peel the carrots. Then cut into halves and gratel them. Now heat a thick based kadhai or non-stick pan and add 2 tablespoons ghee. Lightly fry the dry fruits and remove into a plate.

Then heat the same kadhai and add 1/4 cup ghee. Add the grated carrots and stir cook then while continuosly turning for 10 minutes on low to medium heat till they turn pink - red.

Now add the milk and mix well. Cover and cook on low flame for 20 to 25 minutes, while turning in between till the milk is completely absorbed. It may take longer as per your heat setting.

In another pan, heat the jaggery with 2 tablespoons of ghee and let it melt on low heat. Add cardamom powder when it melts completely. Switch off the heat. Keep it hot.

Now add the milk powder or grated khoya to the cooked carrots. Then stir cook for 5 more minutes. Then add in the melted jaggery and half of the dry fruits.

Stir cook on low flame till the jaggery gets absorbed and the halwa thickness. This will take around 5 to 8 minutes.

Then switch off the heat. Keep turning the Halwa for next 5 minutes to get it completely cooked.

Transfer to serving plates or bowls. Then garnish with the remaining stir fried dry fruits and nuts. Serve warm or chilled and make it for special occasions. Enjoy. Note: I have cooked it in microwave, but I have cooked in kadhai many times previously, so gave that recipe. In microwave, cook carrots and milk for 25 mins, stirring after every 2 minutes.

(To Cook the khoya or milk powder, it took 10 minutes in microwave on medium power. After adding jaggery, cook for 10 minutes, stir after every 2 minutes.)
Tips
Make sure to melt the jaggery before mixing in the halwa.
Make sure to completely cook the carrots in milk and milk should be fully absorbed in the halwa before adding the jaggery.
