Ingredients

  • 1large beet
  • 1 cupcoconut milk
  • 1 cupdiced fresh pineapple

Steps

30-40 mins
  1. 1

    Peel beet and dice 1/2 inch.

  2. 2

    Place diced beet in a 4 qt pot. Add coconut milk. Cook on medium for about 20 minutes.

  3. 3

    While the beets are cooking, prepare the pineapple. Add to the pot and continue cooking until the beets are tender.
