Believe it or not, kids always love picking, washing, cooking and eating their own herbs and vegetables. Yesterday was no different. This dish is submitted by four of my hungriest seven year old students ever. Crazy delicious work yet again kiddos!
Mike's Garden Fresh Melody
So fresh, tasty and healthy! Also, a super easy one pan dish for six!
Believe it or not, kids always love picking, washing, cooking and eating their own herbs and vegetables. Yesterday was no different. This dish is submitted by four of my hungriest seven year old students ever. Crazy delicious work yet again kiddos!
Cooking Instructions

Preheat oven to 400°. Chop all vegetables and herbs and coat with olive oil. Add wine as well.

Seal pan tightly with tin foil. Bake for 60 minutes stirring once at 30 minutes and covering again. Add cherry tomatoes and/or chicken broth if needed at your 30 minute mark. Check carrots for doneness. They're your best indicator.

At 60 minutes uncover, stir and bake for 10 additional minutes to burn off fluids.

Know this dish makes for excellent lunches the following day.

Plate and garnish dish with fresh chopped chives and fresh parsley. Also, slice your meats in thin strips if opting for them. Enjoy!

When I looked in my fridge, I stumbled across a grand cucumber salad that had been literally drug through the freshest part of my gardens!This is an incredibly easy dish that's sure to please and impress every time! She's easy, she's fresh, she's crispy, she's flavorful, she's chilly and she's so deliciously tangy! It was definitely a hit with all the kids! Give her a try and get creative with this recipe!Be sure to use all of this salad up the first day. By the second, the vinager marinade will have broken down your vegetables and will lend an unattractive, murky sauce to it. MMOBRIEN -

Slightly spicy, slightly tangy, big on fresh garden flavors and only 5 minutes fast!Today is Wednesday here in the O'Brien Shire so y'all know what that means! It's, "Clean out the crispers and pick the ripe from the garden day!" My students always have a blast with this since they can create anything their tiny imaginations can dream up.Well, today my 7 year olds decided on a healthy pesto for their parents pasta and shrimp dinner tonight. Giardiniera which means, "Italian Picked Vegetables." It's a delicious condiment that's spicy, sweet, salty and tangy all at the same time. It's great on Chicago Italian Beef Sandwiches, Philly Cheese Steaks, Sausage Sandwiches, Hot Dogs, Hamburgers, French Dips, eggs and most pizzas and pastas. I'm currently teaching triplets and their older brother to cook. Anyway, all wanted to do something very special for their adoptive foster parents anniversary. Well, this was it. Believe it or not, this was their very first attempt at cooking anything whatsoever!They're only 7 and 8 years old! Excelent work kiddos! And great photos! This was one seriously delicious dish!
