Believe it or not, kids always love picking, washing, cooking and eating their own herbs and vegetables. Yesterday was no different. This dish is submitted by four of my hungriest seven year old students ever. Crazy delicious work yet again kiddos!

Ingredients

75 Minutes
6 servings
  1. ● For The Garden Fresh Melody
  2. 1 Pound+ Golden Baby Potatoes [left whole but halved if needed]
  3. 1 Pound+ Red Baby Potatoes [left whole but halved if needed]
  4. 1Medium Vidalia Onion [quartered]
  5. 1Medium Red Onion [quartered]
  6. 1 CupFresh Mushrooms [sliced]
  7. 1 CupBaby Carrots [halved]
  8. 1LG Stalk Fresh Sliced Celery
  9. 6LG Cloves Fresh Garlic [smashed & fine minced]
  10. 1/4 CupFresh Parsley Leaves
  11. 1 CupFresh Cherry Tomatoes
  12. 1/2 tbspFresh Thyme Leaves [fine minced]
  13. 1LG Sprig Fresh Rosemary [fine minced]
  14. 1 tbspFresh Ground Black Pepper
  15. 1 tbspFresh Cracked Sea Salt
  16. 1 tspHerbs De Provonce
  17. 1 tspRed Pepper Flakes
  18. as neededGarlic Olive Oil
  19. 1/4 CupQuality White Wine
  20. 1/4 CupChicken Stock [only if needed at 30 minutes in]
  21. ● For The Garnishments
  22. as neededFresh Parsley
  23. as neededFresh Chives
  24. ● For The Optional Incorperations [add directly to pan]
  25. as neededThick Chicken Strips
  26. as neededSliced Sausage
  27. as neededThick Beef Strips
  28. as neededThick Pork Chops
  29. ● For The Kitchen Equipment
  30. as neededTinfoil Sheets
  31. 1LG Disposable Aluminum Pan

Cooking Instructions

75 Minutes
  1. 1

    Preheat oven to 400°. Chop all vegetables and herbs and coat with olive oil. Add wine as well.

  2. 2

    Seal pan tightly with tin foil. Bake for 60 minutes stirring once at 30 minutes and covering again. Add cherry tomatoes and/or chicken broth if needed at your 30 minute mark. Check carrots for doneness. They're your best indicator.

    At 60 minutes uncover, stir and bake for 10 additional minutes to burn off fluids.

    Know this dish makes for excellent lunches the following day.

    Plate and garnish dish with fresh chopped chives and fresh parsley. Also, slice your meats in thin strips if opting for them. Enjoy!
