First, do your prep work. Chop the yellow onion and tomato into small cubes. Slice the green onion as you like—either in rings or small cubes. Peel and chop the carrot and potatoes into cubes of your preferred size. Slice the sausage.

Before starting the sofrito, heat about 1 1/2 cups water (about 350 ml) over high heat so it's hot and ready to cook the lentils faster when needed.

Heat the oil over medium heat for about 30 seconds. Add the green onion and cook for about 1 minute, then add the yellow onion for another minute, and finally the tomato. Add the annatto powder (or paprika) and the pinch of bouillon powder. Once everything is sautéed, add the carrot and cook for about 2 more minutes.

At this point, the water should be hot. Add it to the sofrito, then add the potatoes and cook for about 5 minutes.

Next, add the lentils and cook until they are tender.

Serve hot and enjoy!
