Ingredients

2 servings
  1. 100 gMascarpone cheese
  2. 100 mlHeavy cream
  3. 30 gSugar
  4. 6 piecesLadyfinger biscuits
  5. 80 mlEspresso or strong coffee
  6. 1 tbspCocoa powder
  7. 1Egg yolk
  8. 1 tbsp(Optional) Coffee liqueur

Steps

    Whisk egg yolk and sugar until pale and thick.

  2. 2

    Add mascarpone and mix until smooth.

  3. 3

    In a separate bowl, whip heavy cream until soft peaks form, then fold into mascarpone mixture.

  4. 4

    Dip ladyfingers briefly in coffee (and liqueur if using).

  5. 5

    Layer soaked ladyfingers and cream mixture in a bowl.

  6. 6

    Repeat layers, finishing with cream on top.

  7. 7

    Dust with cocoa powder.

  8. 8

    Chill in the fridge for at least 2 hours before serving.

Tips

For a richer flavor, use a high-quality espresso and consider adding a splash of coffee liqueur to the coffee.
