Ingredients

30minutes
6 servings
  • 3 cupsrice, day old boiled
  • 2chicken breasts or thighs, cut into small bite-sized pieces
  • 1/2 cupfrozen peas and carrots, thawed
  • 2green onions, sliced
  • 3 clovesgarlic, minced
  • 3eggs, lightly beaten
  • 3 tbsp.soy sauce
  • 1 tbsp.oyster sauce
  • 2-3 tbsp.oil
  • 1 tsp.toasted sesame oil

Steps

    Heat 1 tablespoon of oil in a large skillet or wok over high heat.

  2. 2

    Add the chicken and cook until browned and cooked through (about 5-6 minutes).

  3. 3

    Remove the chicken from the pan and set it aside.

  4. 4

    Lower the heat to medium and a splash of oil if the pan is dry.

  5. 5

    Pour in the beaten eggs and scramble them quickly. Once set, remove them and set aside with the chicken.

    Increase the heat back up to high.

  7. 7

    Add another tablespoon of oil.

  8. 8

    Toss in the white parts of the green onions, garlic, and the peas/carrots. Stir-fry for 1-2 minutes until fragrant.

    Add the cold rice to the pan. Use your spatula to break up any clumps. Let the rice sit undisturbed for 30 seconds at a time to get a slight "sear," then toss.

  10. 10

    Add the chicken and eggs back into the pan.

  11. 11

    Pour the soy sauce, oyster sauce, and sesame oil over everything. Toss constantly for 2-3 minutes until the rice is evenly coated and steaming hot.

    Stir in the remaining green onions and remove from heat.
