Heat 1 tablespoon of oil in a large skillet or wok over high heat.

Add the chicken and cook until browned and cooked through (about 5-6 minutes).

Remove the chicken from the pan and set it aside.

Lower the heat to medium and a splash of oil if the pan is dry.

Pour in the beaten eggs and scramble them quickly. Once set, remove them and set aside with the chicken.

Increase the heat back up to high.

Toss in the white parts of the green onions, garlic, and the peas/carrots. Stir-fry for 1-2 minutes until fragrant.

Add the chicken and eggs back into the pan.
