Ingredients

2 servings
  1. 150 gChicken breast
  2. 2 tbspGinger (finely chopped)
  3. 1small Carrot (peeled, sliced)
  4. 1 tbspCoriander (chopped)
  5. 2Stock cubes
  6. 1/2 tspSalt
  7. 1 tbspSoy sauce
  8. 1 tbspLime juice
  9. 600 mlWater
  10. Rice

Steps

35 minutes
  1. 1

    Add water, ginger, and stock cubes to a pot. Bring to a boil.

  2. 2

    Add chicken breast and simmer gently until cooked through.

  3. 3

    Season with salt.

  4. 4

    Add carrots just before the end to keep them crunchy.

  5. 5

    Remove from heat. Stir in soy sauce, lime juice, and coriander.

  6. 6

    Serve hot.

Tips

Simmer chicken for health, and add carrots just before the end to retain crunch.
