Ingredients

20-30 min
4 bowls
  1. 1 tspOil
  2. 1/2Onion (roughly diced)
  3. 2 clovesGarlic
  4. 1/2 cupCabbage (chopped)
  5. 1/2 cupchopped carrot
  6. 1/2 cupBaby corn (or sweet corn kernels)
  7. 4–5 pieces Broccoli florets (or cauliflower/green peas/French beans)
  8. enough to cover vegetables by 1 cm Water
  9. to taste Salt
  10. to taste Black pepper
  11. 1 tbspCoriander leaves (chopped, for garnish)

Steps

20-30 min
  1. 1

    Heat oil in a pressure cooker. Sauté onion and garlic until fragrant.

    Add cabbage, baby corn, and broccoli. Stir for 1 minute.

    Pour in water until it covers veggies by 1 cm. Add salt. Bring to a heavy boil, then close the lid. Cook for 3 whistles.

    Let the cooker cool. Blend the soup until smooth.

    Add black pepper. Pour into a bowl and garnish with coriander.

    If you are Jain, skip onion, carrot and garlic. Use any other seasonal vegetables instead.

  7. 7

    People with thyroid must replace cabbage broccoli and cauliflower with any other vegetable like bell peppers, corn, French beans, peas etc.

Tips

Feel free to customize the vegetables based on your preference or what you have on hand.
