Chicken Pot Pie

Nothing special to tell. It’s still cold here in the mitten && my brother was craving pot pie. His one request was that I make the crust a cheddar biscuit because he saw someone online do it 😂. As a long time pot pie hater, this was actually really good and I owe him an apology for the years of making fun of him and his love of the dish. However, in proper older sister fashion I shan’t.
(I cut the recipe since he was the only one in the house that wanted pot pie. Ingredients below are family portions. Don’t be like me and forgot to cut the biscuit recipe in half and my ratio was off.)

Marinate chicken - garlic powder, oregano, paprika, chx bouillon, black pepper, & oil. Set aside while you prep veggies. Better overnight, however we do what we can.

Pop over the my cheddar biscuit recipe and whip up your biscuit dough. Pop in the fridge for later. If you cut this recipe, cut that one as well or your dough to pot pie ratio will be off.

Preheat oven to 400

In a skillet cook your chicken thighs until internal temperature is 165 and place to the side to cool. We shall dice up a little later.

Dice up your veggies and set them to the side.

In a deep skillet or pot on medium heat. Sauté veggies & garlic in butter for 5-6 minutes.

Once veggies are “soft" sprinkle the flour on top and stir.

Turn heat down to medium low and slowly add in your liquids. Once they get to simmering turn off heat heat and add your seasonings.

Shred or dice chicken and add to your veggies. Transfer to a baking dish and scoop dough on top. Spread it out better than I did 😩

Bake uncovered for 25 minutes. Brush butter on your biscuit top and enjoy baby!
Tips
When it comes to seasoning listen to your heart. I don’t pay attention when I cook, I get into a flow state frfr.
