Sun Melon or Yellow Muskmelon or Canary Melon is an incredible one available in Summers. And this is the best way to incorporate these beauties in Iftaar preparations in the Holy Month of Ramadan. And this is what exactly I did. And you can see the results for yourselves.
It's creamy. It's luscious. It's absolutely refreshing. One Melon is enough for the whole family. This recipe can therefore be doubled or tripled as per one's requirements.

It's called Canary Melon because of it's bright Yellow colour. They are also called Korean Melons and are like Cantaloupe or Muskmelon with seeds running through their centre. Yellow on the outside and milky White on the inside, these are much sweeter more like Pears. Sun Melons are rich in Vitamins A and C. They also contain Folic acid, Potassium, Magnesium and Carotenoids. In India, these have been grown for Centuries and are found in Uttar Pradesh and Haryana states. They also contain Vitamin B6 that helps to maintain metabolism. They reduce inflammations and helps prevent Diabetes too. It also targets Obesity issues. All in all, a great Fruit for a healthy Snacking, Brunching or even as an anytime wholesome Fruit.

Ingredients

5-6 servings
  • 1roughly chopped Sun Melon/Canary Melon
  • 750 mlthick Curd
  • 4-5 tbspPowdered Sugar
  • 1/4 tspCardamom powder
  • 3-4 tbspchopped Nuts

Steps

    Tie up the thick homemade curd in a clean cotton cloth or a cheesecloth placed in a strainer kept with a bowl underneath it to collect the whey. Refrigerate it for a day.

    Cut sun melon into pieces. Remove the skin and the seeds. Blend into a puree adding the sugar. Set aside until use. Keep refrigerated.

    After the strained curd or the shrikhand is super chilled, mix in all the ingredients in a bowl. Adjust sugar if needed. Also top with slivered dry fruits and nuts of choice or as it is.

    Don't forget to add a pinch of cardamom powder for the authentic taste and flavour. A perfect choice for Iftaar. Enjoy!
