  • 2 gLemon pepper (optional)
  • 2 gSazon Complete (optional)
  • 2 gGarlic powder
  • to taste Black pepper
  • to taste Salt
  • 15 ml (1 tbsp)Olive oil
  • 100 gSweet potatoes (optional)
  • 50 gMushrooms (optional)
  • 1/2Red onion
  • 900 g (2 lbs)Large shrimp (with tail)
  • 100 gBroccoli
  • 2Plantains (fresh or Goya frozen)
  • 1 canGoya black bean soup
  • 400 ml (1 can)Coconut water
  • 400 ml (1 can)Coconut milk
  • 400 g (2 1/2 cups)Rice
  • 30 gButter
  • 15 ml (1 tbsp)Green seasoning
  • 15-30 ml(1-2 tbsp) Walkerswood Jamaican hot & spicy seasoning

Steps

    Marinate shrimp with Walkerswood Jamaican hot & spicy seasoning and green seasoning. Cover and refrigerate overnight or at least 2 hours.

    Sauté marinated shrimp in butter until cooked through.

    Rinse rice. In a pot, combine rice, coconut milk, and coconut water. Cook until rice is tender.

    Heat Goya black bean soup in a saucepan.

    Slice plantains and bake at 200°C (400°F) for at least 20 minutes until golden.

    Cut veggies, toss with olive oil, salt, pepper, garlic powder, Sazon Complete, and lemon pepper seasoning. Bake at 200°C (400°F) for 45 minutes on the top shelf.

    Serve shrimp, rice, beans, plantains, and veggies together.

Tips

Marinate shrimp overnight for deeper flavor and bake plantains for at least 20 minutes.
With the same Walkerswood Jerk seasoning grill up some Jerk Lamp chops to add to this dish!
