I'm a mom of a 2-year-old who is hard to feed vegetables, so I have to get creative. I have to say, these are a hit!

Chop all the vegetables and boil them in salted water until tender, or steam them if you prefer.

Drain the vegetables well and mash until you get a uniform, almost puréed consistency. Add 1 tablespoon of cornstarch and cheese (in El Salvador we use 'quesillo,' but you can use mozzarella). Mix everything well and season to your taste.

I use a small waffle maker, but you can also cook these in a skillet or a panini press—just use what you have. Add a little oil of your choice (just enough to prevent sticking), add the patty, and cook for about 2 minutes per side or until golden brown. Remove from heat and they're ready to serve and enjoy.
