Honduran Enchiladas in Japan
Central America has a cuisine influenced by a mix of colors and flavors, with corn and beans as important staples. Enchiladas (made with corn tortillas) are a popular dish in Honduras. While I was in Japan, I had the chance to reminisce with my friends about Honduran food, adapting it to the ingredients available in Japan... the result was delicious.

While I was in Japan, I had the chance to reminisce with my friends about Honduran food, adapting it to the ingredients available in Japan... the result was delicious.

To make the chismol: Chop the bell pepper, tomatoes, onion, and cilantro into small pieces. Mix all the ingredients together and add salt, cumin, ground oregano, and vinegar to taste. Ideally, use lime juice, but vinegar is also an option. Reserve some of these ingredients for the sauce.

To make the sauce for the enchiladas: In a skillet, add half of the chopped tomatoes and a teaspoon of your preferred oil or margarine. Sauté the tomatoes, then add a tablespoon each of onion, green pepper, and cilantro, along with salt and cumin. Cook over low heat until the sauce thickens.

Prepare the beef: Season the ground beef with salt, cumin, oregano, and any other ingredient you like. Add the two finely chopped garlic cloves. Cook the beef over medium heat until fully cooked.

Make the tortillas: Traditionally, tortillas are made with corn flour, but in Japan, wheat flour was used for a softer texture. Mix the flour with water to form a dough, divide it into 6 parts, and use a rolling pin to shape the tortillas. Cook the tortillas in a nonstick skillet.

Cook the tortillas thoroughly. At the same time, boil two eggs. Once everything is ready, serve.

Use the tortilla as a base, add the beef, chismol, and sauce, then slice the egg and place it on top. Add a teaspoon of Parmesan cheese and enjoy the enchilada. You can add hot chili if you like.
